Chelsea is an account supervisor and registered dietitian at FoodMinds. Her areas of expertise include nutrition research translation and content development, healthcare professional programming and engagement, traditional media relations, and nutrition influencer relationship building. Chelsea received her bachelor’s degree in communication studies from the University of Michigan (Go Blue)! She earned her master’s degree in nutrition education from Columbia University, where she also completed her dietetic internship and obtained the registered dietitian credential.
How did you become interested in nutrition and dietetics [or nutrition communication]?
I was a Communications major in college and planned on pursuing a career in that industry. That all changed when I took an elective in nutrition my junior year. I knew immediately that nutrition was my calling! I decided to finish my major in Communications and take required nutrition courses to work toward the registered dietitian credential. Fast forward to now, and I found a career that combines my two passion areas perfectly.
What is your favorite part of your job?
I love the diversity of my job. Whether it’s coordinating a media placement with registered dietitians, immersing myself in the world of food and nutrition affairs, or implementing and executing an event, my job tasks change by the day so I always have the opportunity to flex my creative muscles.
What’s the best piece of life advice you’ve received?
Sometimes you have to take a step backward to move forward.
How do you find balance?
Exercise is my release. Spinning and yoga keep me sane!
If you had to eat one meal for the rest of your life, what would it be – and why?
There is one dish that I religiously order at one of my favorite restaurants in my hometown. Homemade fusilli pasta with eggplant, fresh mozzarella, and pomodoro sauce. I could eat it everyday and be satisfied – glass of red wine included 😊
